Season chicken with salt and pepper
Heat oil in a large pan over medium heat and add chicken, curry and onions. Stir gently to coat chicken with curry. Cook for 10 minutes or until chicken is fully cooked

Pour coconut milk and tomato sauce in the pan and stir

Simmer for 20-35 minutes, stirring occasionally to prevent burning. Add coconut flakes (optional)

Serve hot over a bed of brown rice, sweet potatoes, or side of your choice
