Coconut Chicken Curry
Ingredients
- Boneless chicken breasts (1kg - cut into chunks)
- 1 teaspoon salt and chili pepper
- 1 tablespoon coconut oil
- 2 tablespoons curry powder
- ½ small onion – finely chopped
- 1 cup tomato sauce
- 2 cups coconut milk
- Coconut flakes (optional)
Instructions
- Season chicken with salt and pepper
- Heat oil in a large pan over medium heat and add chicken, curry and onions. Stir gently to coat chicken with curry. Cook for 10 minutes or until chicken is fully cooked
- Pour coconut milk and tomato sauce in the pan and stir
- Simmer for 20-35 minutes, stirring occasionally to prevent burning. Add coconut flakes (optional)
- Serve hot over a bed of brown rice, sweet potatoes, or side of your choice
