Coconut-Quinoa Granola Chunks/Bars

Ingredients
  

  • 1 cup whole grain uncooked quinoa
  • 1 cup oats
  • ½ cup shredded unsweetened coconut
  • 1 cup coarsely chopped nuts and/or dried fruits cashews, ground nuts, almonds, pecans, raisins etc
  • ½ cup honey
  • ½ cup peanut butter i.e. blend ground nut to paste

Instructions
 

  • Preheat oven to 350F. Spread quinoa and oats on a baking pan and toast for 10 minutes
  • Return mixture into a bowl and add dried fruits, nuts and coconut
  • In a pan, combine honey and peanut butter then bring to a boil and remove from heat
  • Pour over dry mixture and combine completely
  • Pour the mixture into a baking dish and spread evenly. Bake for 20 minutes then let cool for at least 1 hour
