Coconut-Quinoa Granola Chunks/Bars


  • 1 cup whole grain uncooked quinoa
  • 1 cup oats
  • ½ cup shredded (unsweetened) coconut
  • 1 cup coarsely chopped nuts and/or dried fruits (cashews, ground nuts, almonds, pecans, raisins etc)
  • ½ cup honey
  • ½ cup peanut butter (i.e. blend ground nut to paste)


  1. Preheat oven to 350F. Spread quinoa and oats on a baking pan and toast for 10 minutes
  2. Return mixture into a bowl and add dried fruits, nuts and coconut
  3. In a pan, combine honey and peanut butter then bring to a boil and remove from heat
  4. Pour over dry mixture and combine completely
  5. Pour the mixture into a baking dish and spread evenly. Bake for 20 minutes then let cool for at least 1 hour
